(Maldives) Looking for an Executive Chef for a 5* resort.
About the Role:
As Executive Chef, you will be responsible to leads, manages and organizes all requirements for all Kitchens to the highest standards and in accordance to the standard operating procedures.
Responsibility:
• Ensures the quality levels of kitchen production and presentation is maintained at its highest level at all times.
• Communicates daily with Director of Food & Beverage ensuring adequate but not excess food available for forecasted covers.
• To ensure consistency of quality, taste, presentation, and correct temperatures of food served in all restaurants and bars.
• In conjunction with the Director of Food & Beverage, prepares SOP’s for all-new dishes and update prices as and when necessary, sample dishes, take photographs, and with these training aids carry out cookery training sessions with the brigade.
• In conjunction with the Purchasing Department arrange for purchasing of food in accordance with forecasted sales, and achieve budgeted food cost by receiving & securely storing goods, and controlling requisitioning, wastage, pilferage, portion control and producing accurate menu costing.
• Continually monitors and revises as required all matters relating to setting standards for food production, food service and presentation and through effective management ensures that these standards are maintained with the highest integrity by the entire kitchen team.
• Cost controlling, Forecasting, Menu Engineering and Financial Knowledge.(P&L Analysis)
Requirements:
• Comprehensive knowledge of kitchen hygiene practices and occupational health and safety standards will be essential
• Experience in managing large kitchen operations and staff
• Must have culinary experience in luxury resorts
• Basic Computer Skills in MS Office.
